Recipe
- Drain and rinse the black beans, cook them thoroughly and let them cool. Chop the cilantro, then add to the salad.
- Add the canned corn to the salad bowl
- Chop the cucumber, bell pepper, onion, and tomato and add to the rest of the ingredients
- Combine the cucumber salsa, honey, olive oil, salt, and pepper in a jar and shake until well combined. Pour over the salad and toss everything together.
- Always taste before serving. You may find that the salad needs more salt or pepper. If you want it a little sweeter, you may need to add a little honey.
