  • Honey Honey : 1 tablespoon

  • Salt and pepper Salt and pepper : As necessary

Recipe

  1.  Drain and rinse the black beans, cook them thoroughly and let them cool. Chop the cilantro, then add to the salad.
  2. Add the canned corn to the salad bowl
  3. Chop the cucumber, bell pepper, onion, and tomato and add to the rest of the ingredients
  4. Combine the cucumber salsa, honey, olive oil, salt, and pepper in a jar and shake until well combined. Pour over the salad and toss everything together.
  5. Always taste before serving. You may find that the salad needs more salt or pepper. If you want it a little sweeter, you may need to add a little honey.
